Why Extract?
You don’t have to. You can customize SAP, a lot. A big business was told, “your SAP system is so customized, if it went down, it might not start back up. You should migrate to S4.” After migrating, they went bankrupt. All custom reporting was left in the deprecated ECC system, and they could not keep operations on track without it.
SAP is amazing, but complex. SAP put 90,000+ tables in ECC and more in S4. A simple sales order links to numerous tables for headers, details, descriptions, status, and master data. Users like descriptions and sales office names, etc.
